get F1. B1 means nothing to visa officer while you apply for F1, prepare the question "What do you do after graduation?"

The most safe way: Go to the school with B2, and apply for change of
status in USA (every school has its immigrate office). In this way, there is no chance to be rejected.

Right now you can not switch status from B1/B2 to F1 within US. The rule has changed. You got to apply for F1 outside US.

Can u extend F1 in US or u have to back to Canada to apply again? I am a landed imm of Canada

For B1/B2 holders, you can not switch to F1 in US. For F1->F1, F1->H1B, of course no problem.
